We have changed things up a little and are excited to welcome chef Marko Palfi to create the menu for us this season. Our first collaboration was in 2018 and we hope it will continue long into the future.. Marko brings his love of food straight to the plate and his passion can be tasted in his creations.
The ethos is to present you with simple Dalmatian food made from top quality local produce. Our menu is not expansive but we believe it is quality and not quantity that is important (that does not refer to the portion size though!) We will be serving food for vegetarians, pescatarians and carnivores. Expect grilled sandwiches, platters and salads made from summer vegetables of zuchinni, aubergine and peppers, local smoked tuna, sardines, octopus, prawns and sea bream, award winning cheeses such as Paški, Škipavac and creamy buratta and mozzerella. Panceta, buđola and pršut are from Roca where their pigs are hand reared. Some extra virgin olive oil, salt from Nin and the magic of other mediterranean flavours plus a few surprises that will satisfy your taste buds.
In the evening we will be lighting up the open flame and grilling simple dishes that will make your mouth water.
Combine the food, with good drinks, a warm summers day / night, ambient music, sunshine & stars and most importantly people – oh! It will be so good to socialise again! We look forward to sharing it all with you.
Marko started cooking professionally 9 years ago and has been in top level restaurants ever since.
His very first job was bistro „Prasac“ in Zagreb which was considered the best bistro in Croatia at the time.
The renowned croatian chef Dino Galvagno was his mentor & it was here that Marko learnt all the basics of bistro cooking. Later, he briefly worked at a local restaurant in Međimurje, „Terbotz“ but his strong ambitions took him quickly to one of the best restaurants in Slovenia „JB“ with world famous chef Janez Bratovž. It was here that he was taught the craft of „Fine dinning“. On his return to Croatia he joined a very ambitious project „Mundoaka“. Working with chef Tvrtko Šakota they built „Mundoaka“ as a leading „Street food“ restaurant in Croatia. After a year in Zagreb as sous chef, Marko was given the opportunity to lead his own kitchen in his hometown of Čakovec. Marko was accoladed with bringing the restaurant in the top 30 in the country by the only relevant Croatian restaurant guide „Dobra hrana“. And finally, Marko joined The Garden family to build a new wing to the bussines, that was festival street food. In two and a half years with The Garden we have worked on over 20 big food festivals all over Croatia including the summer music festivals in Tisno. Last year „The Garden Kitchen“ was awarded first place for the best burger on „BurgerFest 2020.“ which is the leading street food festival in Croatia. Marko's motto is to combine all the knowledge he gathered with top chefs over the years in bistro, fine dinning and street food to bring top quality food concepts to the streets.
